About the Restaurant

Shadows on the Hudson is an award winning, casual waterfront restaurant situated 40 feet above the Hudson River and just 50 feet from its eastern bank. Offering stunning views of the river and of the Mid-Hudson Bridge, the restaurant features a menu with broad appeal with a focus on seafood and steak and a commitment to utilizing excellent ingredients from local farmers and purveyors. The restaurant is part of the portfolio of the Bonura Hospitality Group and is adjacent to The Grandview, an elegant event venue also operated by the group. Gross F&B revenues for Shadows on the Hudson are $4.5- $5 million.

The Restaurant is open year round for lunch, dinner and brunch service, and will accommodate small lunch or dinner parties for groups of 15 – 100.

About the Position

The Executive Chef is the highest ranking Back of House employee at Shadows on the Hudson and is responsible for overseeing all day to day activities in the a la carte culinary department. The Executive Chef is ultimately accountable for implementing and enforcing all of the policies and guidelines of Shadows on the Hudson to ensure customer satisfaction, reduce waste and spoilage, and drive profit. This position will report to the General Manager, and all Back of House employees of Shadows report directly to the Executive Chef. Essential job functions include:

  • Control day-to-day operations by efficient labor scheduling.
  • Optimize profits and manage expenses by following cash control/security procedures, manage inventory and labor, minimize waste, and review financial reports.
  • Ensure Occupational Safety and Health Act, local health and safety codes, SLA, and company safety and security policy are met and consistently followed.
  • Recruit, interview, hire, train and develop new staff members.
  • Ensure maintenance of equipment.
  • Ensure food quality and 100% customer satisfaction. Supervise portion control and preparation quantities.
  • Responsible for ensuring that all financial (invoices, reporting) and personnel/payroll related administrative duties are completed accurately, on time, and in accordance with company policies and procedures.
  • Work to resolve any disputes among staff, record any intra-employee incidents, and take appropriate corrective action.
  • Foster a healthy working environment based on mutual respect, camaraderie, accountably and merit based rewards. Ensure a safe working environment.

About the Ideal Candidate

The successful candidate will be a true leader in the kitchen with excellent team building skills, a track record of staff development, and excellent technical culinary skills. This high volume, fast paced environment requires an experienced Chef with a strong work ethic who is dynamic and agile with operations, along with possessing strong financial acumen. The ideal candidate will have a collaborative leadership style and will be able to work well with the Executive Chef of The Grandview as events and the restaurant will cross at times. Shadows on the Hudson is a “from scratch” kitchen – a Chef that embraces this approach is critical. Executive Sous Chefs from similar scale or larger operations will be considered.
